Most recipes are for the popular 4 and 6 quarts versions, so you can usually halve the recipes for the 2 qt cooker.  You just have to make sure that a slow cooker is filled at least halfway and no more than three quarters.

The smaller the slow cooker, the shorter the cooking time. Recommended temperature may vary from one slow cooker to another: always respect the manufacturer’s recommendations.

In any case poultry should not be cooked for extensive periods of time, such as 9 or 10 hours.

Below are some simple chicken recipes I had collected.
 

Recipes


 

Barbecue chicken
 

Ingredients:

Cooking Spray
2 to 4 boneless, skinless chicken breasts
1/2 bottle (8 ounces) barbecue sauce (your favorite)

Directions:

 

1.  Spray slow cooker with cooking spray.

2.  Pour favorite barbecue sauce over the top.

3.  Cook on HIGH heat 5 to 6 hours or on LOW heat for 6 to 8 hours.

 

 

Lemonade chicken
 

Ingredients:
 

Cooking spray

4 boneless chicken breasts

1 can frozen lemonade  (6 ounces) thawed

3 tablespoons brown sugar

1 tablespoon vinegar

1/4 cup ketchup

 

Directions:

Spray slow cooker with cooking spray.

 

1.  Place chicken breasts on the bottom of the cooker

2.  Stir lemonade concentrate, brown sugar, vinegar, and ketchup together

3.  Mix well.

4.  Pour over chicken.

5.  Cook on HIGH heat 2 to 3 hours or on LOW heat for 6 to 8 hours

Serving suggestions: Thicken the liquid (with potatoes flour or corn starch) and serve as a sauce for potatoes or rice.

 

 

Chicken Teriyaki

 

Ingredients:

 

Cooking spray

5 to 6 boneless, skinless chicken tenders

1 bag (16 ounces) frozen oriental vegetables
½ bottle (9 ounces) teriyaki sauce

 

Directions:


1.  Spray slow cooker with cooking spray.

2.  Cut chicken tenders in thirds and place in cooker.

3.  Mix frozen vegetables and teriyaki sauce together.

4.  Pour over chicken.

5.  Cook on HIGH heat 2 to 3 hours or on LOW heat for 3 to 4 hours.

 

 

Chicken Cacciatore

Ingredients:

Cooking spray
2 to 4 frozen boneless, skinless chicken breasts
1 jar (26 ounces) chunky vegetable spaghetti sauce
1/2 teaspoon minced garlic or garlic past

Directions:

 

1.  Spray slow cooker with cooking spray.

2.  Place chicken breasts on the bottom of the cooker

3.  Pour spaghetti sauce on top of chicken.

4.  Sprinkle with garlic

5.  Cook on HIGH heat 4 to 5 hours or on LOW heat for 7 to 8 hours.

 

 

Chicken Parmesan

Ingredients:

Cooking spray
2 to 4 boneless, skinless chicken breasts
1/2 envelope dry onion soup mix
1 can (10 ¾ ounces) cream of mushroom soup (condensed)
3/4 cup evaporated milk
1/2 cup apple juice
1/2 cup converted white rice (uncooked)
¼ teaspoon pepper
1/3 cup grated Parmesan cheese

Directions:

1.  Spray slow cooker with cooking spray.
2.  Place chicken breasts on the bottom of the cooker
3.  Mix all the other ingredients, except pepper and cheese in a separate bowl.
4.  Pour soup and rice mixture over the chicken.
5.  Add pepper and sprinkle the cheese
6.  Cook on HIGH heat 3 to 5 hours or on LOW heat for 7 to 8 hours.
